15/18 Eggs, (or up to 24-26 eggs...adjust ingredients appropriately)
cracked in a large bowl
1 or 2 (two for sure if using larger number of eggs) pkg of frozen,
chopped spinach, thawed and drained
4 or 5 Hot sausages (if you're a wimp, use mild sausages, skin
sausage (if necessary) and chop into small pieces
1 medium onion, finely diced
1/4 cup grated Parmesan & Romano cheese ( Doesn't need this
cheese if you coat the top later with a heavy layer of cheese)
1 teaspoon sugar
1/2 cup Hot salsa (optional)(make it too loose and liquidy)
1 small can of chopped mild chilies (optional)
Salt, Pepper, Oregano, Garlic, and Cayenne to your taste.
You can be "heavy-handed" with the spices as the eggs
absorb a lot. |

Place all of the above ingredients in a large
bowl and mix well. Then, put everything into a greased or Pam
sprayed glass or metal baking pan (3 or 4 quart...four quart
if you use 24 eggs). Bake for approximately 15 minutes at 325
degrees - add more grated Parmesan and/or Romano cheese on top,
sprinkle generously to completely cover, and return to oven
for another 30 minutes (or until the edges are slightly brown
and a toothpick comes out clean from the center). (EDITORS NOTE:
I CUT OUT A ONE INCH SQUARE FROM THE CENTER & TASTE.) If
you are satisfied, it's done, remove from oven, cut into squares.
Serve warm or cold. Decorate serving plate with whole, hot peppers
or pitted, large olives (if you are into decorating or garnishing
everything you serve.) Remainder will last for several days
in refrigerator.
You can experiment with the following, as long
as you don't use too much liquid because the eggs hold everything
together: chopped Crab and or Shrimp (change seasoning to"fish"
seasonings), chopped Zucchini, whole kernel corn, fresh asparagus,
Broccoli, long grain wild rice, (instead of sausage). Have fun
and use your own imagination.
